Day 342, 12/8/2013 - Eat, slept in since I had no place to be. Enjoyed my Texas Pecan coffee and fruit for breakfast. Lunch was left over Rotel Rice Creation and queso & chips. For dinner I prepared Rotel shells & cheese. The third day of the Texas ice storm of 2013 and I decided to bake. So I gathered all of the ingredients and donned the Christmas apron that my Mom made for me and baked cookies. I never have time in my normal schedule to bake, it felt good. I found out that maple syrup can be substituted for vanilla. That trip to Sam's Club paid off again as I used a pound of butter for the cookie recipes. First time to use my stacking cooling racks also. A fun day.
Pray, I prayed for any who decided to venture out on the frozen roads, that they would be safe. So many have been stranded on the interstate, I pray that the few hours of above freezing temps allowed them to escape their highway prison. Joy, my joy has been in cooking and baking over the past several days. I love to cook and rarely have the time with my busy schedule.
